Elevate your mealtime with this warm Couscous Salad. Packed with fresh veggies, feta, and olives, it’s a quick yet flavourful dish.
› 2 cups chicken stock
› 2 cups couscous
› 1 cucumber, chopped
› 150 g feta, crumbled
› 2 tomatoes, diced
› 2 spring onions, sliced
› ½ cup chopped flat-leaf parsley
› ½ cup pitted black olives
In a saucepan, bring the chicken stock to a boil. Add the couscous to the boiling chicken stock and stir to combine. Remove the saucepan from the heat, cover it, and let it stand for 6 minutes. Transfer the cooked couscous to a mixing bowl, then fluff it with a fork.
Add the remaining ingredients to the couscous in the bowl.
Season the salad with salt and pepper to taste before serving.
