Roasted Plums in Parmesan Nests

Indulge in the unique pairing of Roasted Plums in Parmesan Nests. Sweet plums meet savoury Parmesan for an unforgettable culinary experience.

› 4 Black Doris plums
› 2 tbsp runny honey
› 125 grams grated parmesan cheese
› handful of basil leaves, for serving

Preheat your oven to 180°C and line a baking tray with parchment paper.

Begin by preparing the plums. Stone and halve them, then place the plum halves on the prepared baking tray.

Drizzle the runny honey over the plums and grind a sprinkle of freshly ground black pepper on top.

Roast the plums in the preheated oven for approximately 20 minutes or until they are tender and slightly caramelized.

While the plums are roasting, prepare the Parmesan nests. Place a piece of baking paper on a paper plate or a microwave-safe dinner plate.

Spread a small amount of grated Parmesan cheese into a circle shape on the baking paper.

Microwave the Parmesan on full power for about 25 to 35 seconds, or until the cheese wafers are lightly browned.

Allow the Parmesan wafers to cool slightly, then gently drape them over the underside of mini muffin tins to create nest shapes.

Store the Parmesan nests in an airtight container at room temperature for up to 2 days, separating layers with wax paper to prevent sticking.

When you’re ready to serve, place a piece of the roasted plum in each Parmesan nest and top with a basil leaf.
